Varu Payaru, also known as Varagarisi, Pori Kollu, or Mulai Kollu
It is a wholesome, protein-rich traditional snack from Tamil Nadu. Made by dry roasting a blend of legumes and pulses without using any oil, this healthy, crunchy mix has been a part of Tamil culinary culture for generations.
Especially popular during Valagappu (Seemandham) ceremonies in Tirunelveli and southern Tamil Nadu, Varu Payaru is an important seer bhakshanam item symbolizing health and abundance. The name itself comes from “Varuththal” (to dry roast) and “Payaru” (legumes), making this the perfect oil-free snack for religious and family occasions.
The mix typically includes green moong, cowpeas, black chickpeas, yellow peas dal, roasted peanuts, sesame seeds, beaten rice (poha), and rice, all lightly salted and spiced — offering a satisfying, guilt-free crunch in every bite.
